Chuck us any of your recipe tips here, and for starters here's a link to the recipe which Simon Majumdar did at the 2009 Cowbridge Food and Drink Festival, his so-called LSD (=Life Saving Daal). He reckons it's a great cold cure as well as being very decent food.

Amanzi’s Baobab chicken groundnut stew

This delicious groundnut stew is traditionally eaten all over the African continent. Recipes differ from region to region: in west Africa it is searingly spicy, while in central Africa cassava leaves are included in the stew. This version has a mild to medium heat and we serve the spinach or cassava leaves on the side. It is enhanced by the unique flavour of baobab fruit. Serves 4.

1 medium onion, peeled and chopped
2-3 tablespoons olive oil (or sunflower if not available)
2 cloves garlic, chopped
1 small nugget ginger, chopped
1 small mild green chilli, chopped
1 mild red chilli, chopped
1 tsp tamarind paste (if available)
4 organic chicken breasts, cubed
2 cups organic chicken stock
1 can chopped tomatoes
1 tbsp tomato puree
1 cup peanut butter
3 tbsp baobab fruit powder (www.yozuna.com)
Salt and pepper to taste

Chop and fly the onion in a little oil on a medium heat. Add the garlic, chilli, ginger and tamarind. Add the chicken and fry quickly to seal it, stirring all the time. Stir in the chicken stock, tin of tomatoes, tomato paste, peanut butter, baobab fruit powder and season with salt and pepper. Reduce heat, cover and cook for 40 minutes, stirring occasionally. Serve with rice and roasted vegetables.
